Butter.
I want to talk about butter, a food derived from milk. Butter taken in moderation is good for health. In effect :
It is very high in fat (82% maximum).
It contains traces of minerals, proteins, lactose, fat-soluble vitamins, etc.
It has a very high energy value (750 calories per 100 g) to be recommended in cold weather and intensive effort. Its water content varies between 13 and 16%.
It is rich in vitamin D and especially vitamin A. Raw, it is easy to digest.
It is recommended fresh and raw for children, convalescents, expectant mothers, breastfeeding women and students during exams.
But because of its richness in cholesterol (250 to 300mg per 100g of butter) it is contraindicated in cardiovascular disorders, hypercholesterolemia, obesity, etc. Obese or predisposed people should avoid butter and anything fatty because of the high energy value of lipids (9000 calories per 100g).
NB: You must avoid heating butter and oils above 120 0 (formation, by "cracking", of carcinogenic substances, in particular tar, for example: 3-4 benzopyrene).
